Die Rebsorte Spätburgunder zählt zu den ältesten Rebsorten und gilt als Stammform aller Burgundersorten. Die blauen Burgundertrauben sind klein, rund und haben nicht viel Saft. Die Beerenschale ist blau und enthält die Farbstoffe, das Fruchtfleisch hingegen ist weiß.
