Völlig gesunde, reife Spätburgunder-Trauben wurden Anfang September 2022 von Hand gelesen, entrappt u. nach 6 Stunden Maischestandzeit gekeltert.

Begleitet gut Spargel-Erdbeer-Salat mit weißer Balsamico-Vinaigrette und mediterrane Gerichte: wie Fisch, Meeresfrüchten, Salaten mit Olivenöl, magerem Käse, Geflügel und kurzgebratenem Kalb- oder Schweinefleisch.

Der Spätburgunder bedarf sehr viel Pflege und Zeit bei der Weinbergarbeit: da die Burgundersorten stark dazu neigen Doppelaugen/-triebe auszubilden, brechen wir diese aus, um die Laubwand gesund und luftig zu halten.

30 % unserer Rebfläche ist mit Spätburgunder bepflanzt. Von feinen Sekten – weiß oder Rosé gekeltert, Rosé Wein bis zu kräftigen Rotweinen in Holzfässern und Barriques ausgebaut, zeigt die Rebsorte eine enorme Bandbreite.
