Die Spätburgunder und Cabernet Trauben werden zusammen im Holzcuve vergoren und mehrmals täglich unter gestoßen. Nach der Maischegärung wird der Wein in großen Holzfässern ausgebaut.

 

Während die Burgundersorten bei der Weinbergarbeit sehr aufwendig bei den Laubarbeiten und dem Doppeltriebe ausbrechen sind, zeigen die Cabernet Spielarten Ihre südliche Herkunft mit einer sehr späten Reife.
