Der Grauburgunder, zugehörig zur Burgunderfamilie, ist durch natürliche Mutation aus dem Spätburgunder entstanden. Die Burgundersorten lassen sich bis zum Sommer nicht unterscheiden und sind erst ab der Beerenreife durch die rötliche Beerenfarbe zu identifizieren.

Intensive Laubwandarbeit, wassersparende Bodenbearbeitung und Dreivierteljahresbegrünung, sowie das Trauben halbieren, damit die Beeren lockerer hängen und weniger krankheitsanfällig sind. Alle Wilhelmshof-Weine sind Prädikatsweine und legen damit Zeugnis ab, dass Ihre Qualität einzig im Weinberg entstand.
