    Sehr geehrte Familien Roth und Ochocki,
    meine Frau und ich hatten vor einigen Tagen Anlass, einen alten Rotwein aus unserem Bestand zu trinken und haben dabei aus dem kleinen Rest-Fundus unserer Wilhelmshof- Weine einen

    Siebeldinger Königsgarten / 2002 Rotwein trocken 0,5 l / im Barrique gereift

    geöffnet und mit großer Freude genossen: Sehr voller Geschmack, keinerlei Fremd-Note, Kork einwandfrei, einfach köstlich.

    Danke für diesen alten, aber immer noch sehr guten Tropfen aus ihrem Keller. Wir haben noch zwei Flaschen davon im Keller und freuen uns darauf !

Herstellung und Anbau

Die Spätburgunder und Cabernet-Cubin-Trauben wurden entrappt und gemeinsam in einer klassischen 10tägigen Maischegärung miteinander vergoren. Die Gärung fand in einem Holzcuve (Holzgärbottich) statt. Mehrmals täglich wurde der Maischekuchen untergestoßen.

 

Der Cabernet Cubin wurde in Veitshöchheim gezüchtet, um die Cabernet Rebsorten an das mitteleuropäische Klima anzupassen. Die Rebsorte ist sehr widerstandsfähig und die letzte die im Wilhelmshof alljährlich geerntet wird.
